A popular foodie has revealed her own recipe for ‘lazy’ vegetable soup that’s sure to bring a touch of warmth to a cold winter evening.
Ayeh Farr, who runs the Cooking with Ayeh pages on Instagram and TikTok, said it is the perfect soup for when you are feeling under the weather or need some comfort.
‘This soup is vegan, cosy and has been my go-to soup lately,’ she said.

The home cook calls it her lazy soup because it only takes 20 minutes, one pot and the preparation of a few vegetable to put together
The home cook has posted a video of the dish before but never shared the recipe.
‘So many of you asked for the recipe when I posted it last time,’ she said.
The video has been seen more than 168k time with hundreds leaving comments thanking the home cook for the perfect winter recipe.
‘This looks amazing,’ one woman wrote.
‘Making this tonight,’ declared another.
The recipe video starts with Ayeh sautéing her onions and garlic, she says the flavour is the base of the soup.
She then prepares the rest of her vegetables including carrot, zucchini and bok choy.
The young woman says the soup is her go-to comfort food in winter
The- soup simmers for 15 minutes before the noodles and bok choy are added for the final minute of cooking
She puts the carrot and zucchini in the saucepan with some vegetable stock and lets them simmer for ten to 15 minutes.
The bok choy and noodles are added a minute before the dish is served.
Ayeh also said protein can be added to the soup in the form of tofu or dumplings.
How can I make Ayeh’s vegetable soup at home?

Rice vermicelli noodles
1 – Prepare vegetables – Chop onion, carrots, bok choy, and zucchini into similar small cubes. Also, dice garlic cloves into small pieces
2 – Make the broth – Sauté onion until translucent and add garlic and sauté for a minute. Add vegetables and sauté for a few minutes. Then add vegetable stock, soy sauce, and season. Add 1-2 cups of water then simmer the pot over medium heat with the lid closed
3 – Add ingredients – After 10-15 minutes of cooking, add baby bok choy and rice noodles. Let it cook for 1-2 minutes and it’s ready to serve.
4 – Serve – With freshly cracked black pepper and some chopped parsley.
